What’s the prompt of the outcomes?
You can draw images based on a source. You can use various images as source material (maybe you can try to draw an image with a flower using only the keyboard, thus letters, numbers, or symbols). The sources can also be images that are connected to technology (messaging technology); you can draw icons that have to do with old-fashioned icons (first phone, pen, etc.). How do you choose to use the keyboard related to communication, or images related to communication?
Take the functionality and put it in the real world. If you forward a message to a person, how that’s working in person? Also, how do you reply in person, taking these functions and putting them in a different context?
What are the different ways of subverting the Mail as a messaging tool?

My favorite technique is using only the keyboard to create something using Apple Mail. No images, no shapes, etc.
Your idea to play using the settings of your mac (system preferences) to change the background color (light, dark), is very clever. You can try experimenting with more settings if you like.
You can experiment with the buttons send, reply, forward, etc. (functional tools) to see if something changes.

You can give instructions to other people, on how to use Apple Mail to create something.

You can try to screenshot the whole screen (containing the recipient, subject, etc.), not only the isolated part (visual outcome) because in this way the artworks are more abstract.
Your visual outcomes can serve a purpose.
The final format for presenting my outcomes can be a digital pdf where you scroll through the emails.
